Blend: 32% Golden Russet, 23% wild foraged pears, 18% Jonagold, 11% Goldrush, 6% mixed crabs and heirlooms: Wickson, Esopus Spitzenburg, Roxbury Russet, Northern Spy, Ashmead's Kernal

Fermentation: Primary spontaneous in stainless steel then bottled pet-nat style to continue in bottle fermentation

TASTING NOTES

On the nose – red cherry, dark roast coffee and carnations

On the palate – tannic pear with balanced acidity and a zesty, ripe, citrusy finish.
